Meatless Crockpot Chili


Sometimes us moms just really need fast recipes that require little to no effort. Today I’d like to share a quick chili recipe that is easy with a total prep time of 7 minutes and goes right in the Crockpot! I hope you enjoy it!


  • 2 cans diced tomatoes
  • 1 can tomato paste
  • 1 can kidney beans
  • 1 can corn
  • 1 can canella beans
  • Paprika (to taste)
  • Garlic salt (to taste)
  • Chili powder (to taste)
  • Pepper (to taste)
  • Minced onion (to taste, optional)
  • Salt (to taste)


1.Prep Crockpot by either spraying with Pam or using a Crockpot liner.

2.Open the kidney beans, canella beans and corn then, dump into a colander. Rinse well and     strain well. Then add to Crockpot

3.Open the canned tomatos and dump into Crockpot. DO NOT STRAIN THE

4.Add Tomato paste to crock pot

5.Add seasoning. I usually start with a tablespoon of each and mix really well and then taste test from there. Everyone likes their chili                     different so just give it a shot!

6.Cook on low for 4 hours.

Empower Each Other


I’ve been sitting here, staring at the computer screen and debating on if I should write this post or not. But at the end of the day I know that people need to see this, especially us moms and dads that have similar situations to my own.

Hubby has one more day at home before heading back to the boat for another month. One more morning of craziness getting the kids ready for the day. One more breakfast, one more dinner and one more night in our bed. My emotions are all over the place again as I mentally prepare myself for the next 4 weeks.

Being a stay at home mom is hard and being a wife who lives away for from her husband on a steady rotation is also hard. Putting them together brings out a whole other person in me.  I know that I am about to experience loneliness and resentment that really isn’t fair to my husband for me to have. I’m going to have 3 kids relying on me and only me and I’m going to have long, hard and stressful days.

I write this today for ALL OF YOU. All of you stay at home moms just trying to make it through the day. All of the military families and the families who have parents who travel. WE ARE STRONG. We are important and most of all we are appreciated. Even when you feel like you aren’t, know, deep down in your heart, that you are. Your children will thank you for this when they have families of their own. There are other parents that wish they had your life even on the days where you wish you had theirs.  Your work is not going unnoticed. Your values and morals will be passed down stronger in your family because of this.

Closets and wine may come to mind when you are looking for 5 minutes of solitude. I am here to tell you that is OK. It is okay to cry, to be mad. It is okay to not want to get out of the bed every once in a while. But remember to take time to enjoy the happy moments! When they are there let them fill you up. Stop what you are doing and just wallow in it. Dishes and laundry can wait. That bathroom will still be there tomorrow. But that time may not come again. Stop. Just stop and enjoy it. Know that we are all together in this! Reach out when you need it! I am always open to talk in a non judgmental way. Hold Fast you guys.
